Twice Baked Potatoes

Ingredients

6 medium potatoes
1 head of roasted garlic
2 cups shredded cheese (I used 1 cup cheddar, 1/2 cup of mozzerella, and 1/2 cup of smoked fontina. You can use any cheese or combination of cheeses)
4 slices of bacon, cooked and crumbled.
4 TBSP. butter
1/4 cup milk

Directions

Preheat the oven to 450 degrees

Wash the potatoes, and poke a couple of times with a fork.

Place the potatoes in the oven, and bake for 45-50 minutes, until fork tender.

Remove the potatoes and let cool for about 30 minutes.

Slice about 1/4 inch horizontally off of each potato.

Carefully scoop the insides of the potatoes into a mixing bowl. Be careful to leave the potato skin intact.

Add 1 1/2 cups of the cheese, bacon, garlic, butter and milk to the potatoes, and mix thoroughly.

Spoon the potato mixture into the potato skins. (you may have some potato mixture left over).

Sprinkle the remaining cheese over the potatoes.

Place the potatoes into the oven and bake for 10-15 minutes, until cheese is melted.

Remove from the oven and serve.
