Stuffed Tomatoes
Ingredients
4 medium tomatoes
1/2 cup plain bread crumbs
2 cups shredded cheddar cheese
2 tsp. garlic powder
2 tsp. dried oregano
Directions
Preheat the oven to 350 degrees
Cut about 1/2
inch off of the top of each tomato. Carefully scoop out the insides
of each tomato.br>
In a medium mixing bowl, combine the breadcrumbs, 1 1/2 cups of the
cheese, garlic powder, and oregano.
Stuff the tomatoes with the breadcrumb and cheese mixture, and sprinkle the remaining 1/2 cup of cheese on the tomatoes.
Put the tomatoes in a baking dish, and bake in the oven for about 20 minutes, until heated through.
Remove from the oven, and serve hot.
Serves 4.
Variation: For spicy jalapeño tomatoes, substitute 1 cup of monterey jack cheese or pepper jack cheese for 1 cup of the cheddar cheese, and add 1 diced jalapeño.
