Oven Roasted Potatoes With Horseradish
Ingredients
Sauce:
1 cup sour cream
2 Tbsp creamy horseradish
1 Tbsp finely chopped fresh dill
1/4 tsp salt
black pepper
Potatoes:
4 large baking potatoes
2 Tbsp olive oil
1 tsp paprika
1/2 tsp salt
1/4 tsp black pepper
Directions
To prepare the
sauce:
In a medium bowl, whisk together the sour cream, horseradish, dill,
salt and pepper. Set aside in the refrigerator for at least 30 minutes.
To prepare the
Potatoes:
Spray a roasting pan with cooking spray and
set aside.
Heat oven to 425 degrees.
Scrub the potatoes
well and cut each into 6 wedges. Put into the
roasting pan and toss with the olive oil, paprika, salt and pepper.
Mix with a large spoon until the potatoes are evenly coated. Roast for about 20 to 25 minutes, or until tender. Stir once during the cooking time.
Serve the potatoes
with a bowl of the sauce on the side.
