Cream Of Chicken Soup

Ingredients

2 Tbsp. butter or margarine
3 Slices bacon
3 cloves garlic, finely chopped
1/4 cup flour
6 cups chicken stock
2 cups heavy cream or milk
1 carrot, grated
2 cups cooked, shredded chicken
2 cups grated cheddar cheese
salt and pepper to taste

Directions

Cut the bacon into small pieces. In a soup kettle, melt the butter over medium high heat. When the butter is melted, add the bacon, and cook until bacon is crisp, and the fat has rendered out. Remove the bacon and set aside.

Add the garlic to the kettle, and cook briefly, until golden brown. Add the flour and stir until the flour is incorporated into the butter and bacon grease.

Add the chicken stock, cream or milk, carrot, and chicken to the kettle. Bring to a boil.

When it boils, turn the soup to medium low, add the cheese and bacon, stirring until the cheese melts. Taste the soup, and season with salt and pepper as necessary.

Ladle the soup into bowls and serve
