Creamy Broccoli & Cauliflower Soup

Ingredients

1 1/2 lbs fresh broccoli, chopped
1 1/2 lbs fresh cauliflower, chopped
1 T unsalted margarine
Water
2 C milk
1/2 C processed cheese, cubed

Directions

Remove any tough stalks from the broccoli and cauliflower and discard. Place the broccoli and cauliflower in the crock pot. Place the margarine over the vegetables.

Fill the crock pot with just enough water to cover the broccoli and cauliflower pieces.

Cover and cook on the high temperature setting for 2 hours.

Pour in the milk, cover the crock pot and continue cooking 30 minutes.

Stir in the cheese, cover the crock pot again and continue cooking 20 minutes or until the cheese has completely melted into the soup.

Serving Size: 6

If you want to make this soup a bit more substantial, you could add some cubed ham, or cooked bacon at the beginning, when you add the broccoli and cauliflower.
