Beef & Barley Soup

Ingredients

1 lb. beef stew meat
1 28 oz. can of tomatoes (whole or crushed)

1 cup pearl barley
1 qt. beef stock
2 medium potatoes, peeled and cubed.

Directions

Brown the stew meat in a large skillet. Cook it in several batches if necessary to avoid overcrowding the pan.

Pour the tomatoes into a soup kettle, crush the tomatoes with a fork or spatula if using whole tomatoes.

Add the beef, the barley, the stock, and the potatoes to the kettle. Bring to a boil, then turn the heat down and simmer, covered for 30-45 minutes, until the meat and the potatoes are tender.

Ladle into bowls and serve.
