Cut
the butter or margarine into 3 pieces
In
the top half of a double boiler, add the egg yolks, lemon juice,
and one piece of the butter or margarine. Place over boiling water,
and cook, stirring constantly untill the butter melts.
Add
the remaining butter, one piece at a time, stirring constantly,
making sure each piece of butter is melted before adding the next
one.
Cook
and stir the sauce until the sauce thickens, about 1 to 2 minutes,
and immediately remove from the heat.
Makes
about 3/4 cup.
