Roast Beef, Horseradish, & Apple Wraps
Ingredients
2 Tbsp butter or margarine2 medium apples, peeled, cored, and chopped
1/2 medium onion, thinly sliced (optional)
4 flatbreads or large flour tortillas
1/4 cup cream cheese
4 Tbsp. prepared horseradish
8 oz. sliced roast beef
Directions
In a medium skillet, melt 1 Tbsp of the butter over medium high heat. Add the chopped apple, and cook, stirring frequently, until the apple is soft and cooked through, about 2-3 minutes. Remove from the skillet and set aside.
In the same skillet, melt the remaining Tbsp of butter over medium high. Add the onion, and cook until the onion is soft and translucent, and just starting to brown, about 3 minutes. Remove the onion from the skillet, and set aside.
Spread one side of the flatbreads with the cream cheese and horseradish. Arrange 2 oz. of the roast beef on each flatbread, then spread the cooked apple evenly across the roast beef, and the onion on top of that.
Roll up each flatbread, cut in half and serve.

This is a great recipe for a picnic. It makes a nice substantial lunch, without being too heavy, which is nice in the hot summer weather.
