Recipes: Salads: Low Carb Mock Potato Salad

Ingredients:

3 large kohlrabi bulbs
3 hard boiled eggs, chopped
chopped celery
chopped onion,
minced garlic
1/4 cup mayonnaise
sea salt to taste
cayenne pepper
dill weed
lemon juice

Directions:

Peel and dice the kohlrabi.

Boil until tender...about 10 to 15 min. Drain, rinse in cold water.

Sprinkle with about 1 Tbsp of lemon juice.

Sprinkle with dill weed, cayenne pepper, and salt. Mix together.

Add celery, onion, garlic, eggs and mayonaise and mix well. Chill.
