Recipes: Salads: Bulgur Salad

Ingredients:

1 cup bulgur wheat
2 cups hot water
1 medium cucumber, peeled, seeded, and diced
2 medium tomatoes, cored and diced
3 Tbsp fresh basil, chopped
1/2 cup crumbled feta cheese
Lemon Juice
Olive Oil

Directions:

Put the bulgur in a mixing bowl, and pour the hot water over it. Let it soak for about 30-45 minutes.

Drain the bulgur if necessary, and add the cucumber, tomato, basil, and feta cheese. Mix well.

Cover the bowl, and refrigerate for at least an hour.

Just before serving, drizzle the salad with a little bit of lemon juice, and a little bit of olive oil.

Bulgur is wheat that has been cracked, and then parboiled or steamed, and dried. It's an excellent source of fiber. This salad is similar to the Tabbouleh salad of the Middle East.
