Put the bulgur
in a mixing bowl, and pour the hot water over it. Let it soak for
about 30-45 minutes.
Drain the bulgur
if necessary, and add the cucumber, tomato, basil, and feta cheese.
Mix well.
Cover the bowl,
and refrigerate for at least an hour.
Just before
serving, drizzle the salad with a little bit of lemon juice, and
a little bit of olive oil.

Bulgur is wheat
that has been cracked, and then parboiled or steamed, and dried.
It's an excellent source of fiber. This salad is similar to the
Tabbouleh salad of the Middle East.
