Preheat Oven
to 425 degrees F.
Place each chicken
breast between 2 sheets of plastic wrap or waxed paper, and pound
flat, to about 1/4 inch thick. Season each breast with some salt
and pepper.
In a small bowl,
whisk together the egg and water or milk to make an egg wash.
Place the flour
in a shallow pan or bowl.
In a shallow
pan or bowl, mix together the bread crumbs and the cheese.
Dip each chicken
breast into the flour, coating them on both sides.
Dip the chicken
in the egg wash, and then the bread crumbs and cheese, making sure
the entire breast is coated.
Place the chicken
into a baking pan, with the butter.
Bake the chicken
at 425 degrees for 15-20 minutes until no longer pink in the middle.
Remove from
the oven and serve.
