In a medium
mixing bowl, mix together the water and the yeast. Stir until the
yeast is dissolved.
Add the salt,
and 2 cups of the flour, and mix well.
Add more flour
as needed, about 1/4-1/2 cup at a time until the dough forms a ball.
Do not add too much flour. You may not need the entire 3-4 cups.
Lightly dust
your counter with some flour, and place the ball of dough in the
middle of the floured area. Knead the dough for 5-10 minutes.
After you have
kneaded the dough, place it into a lightly greased mixing bowl,
cover it with a clean kitchen towel, and set it aside in a warm
place to rise. You did use a bowl big enough to let the dough rise,
didn't you?
When the dough
has doubled in size, about 15-30 minutes, remove the towel, and
gently punch down the dough.
Remove the dough
from the bowl and it's ready to use.
Makes 1 large
pizza (about 16 inches) or 2 medium (12 inches), or two deep dish
pizzas (8-9 inches)

This is the
recipe I always use when I make pizza. If I need the dough a bit
softer, to stretch it out onto a pizza pan, I usually use a bit
less flour. If I need a stiffer dough, that I'll need to pick up
and move around when I'm making calzones or grilled pizzas, I'll
use a little bit more flour. With practice, you'll know how much
of the 3-4 cups of flour that you'll need to use.
Also, if you
want, you can substitute 1 cup of whole wheat flour for 1 cup of
the white flour.
