Italian Bean Salad

Ingredients

2 15oz. Cans of beans
1/4 cup pepperoni, diced
1/4 cup italian salami, diced
1/4 cup red onion, finely diced
1 med. or large tomato, diced
1/3 cup shredded parmesan cheese
2 Tbsp balsamic vinegar
1/4 cup olive oil
1 tsp mustard
1/2 tsp dried oregano

Directions

Drain and rinse the beans.

In a medium bowl, combine the beans, pepperoni, salami, onion, tomato, and parmesan cheese.

In a small mixing bowl, whisk together the vinegar and olive oil. Slowly add the olive oil, whisking constantly. Mix in the oregano.

Pour the dressing over the salad, and toss well.

Serves 4-6
