Recipes: Meats: Smoky Chipotle Bacon Cheeseburgers

Ingredients:

1 lb. ground beef
4-6 chipotle peppers (use the canned ones in adobo sauce)
2 tsp. adobo sauce
1 tsp. liquid smoke
1 1/2 cups cooked, crumbled bacon
A few slices of smoked cheddar cheese
1 Tbsp butter or margarine
1 medium onion, peeled and thinly sliced.
4 hamburger buns.

Directions:

Preheat your grill to high.

Chop the chipotle peppers.

Add the chipotles, ground beef, adobo sauce, liquid smoke, and 1 cup of the bacon to a mixing bowl. Using your hands, combine these ingredients thoroughly.

Divide the mixture into four equal portions, and shape into patties. Place the patties on a hot grill, and cook until no longer pink in the center, about 5 minutes per side. Place some of the cheese on each patty, and cook for another couple of minutes, until the cheese starts to melt.

Remove the burgers from the grill and set aside.

In a medium skillet, melt the butter. Add the onion, and saute until translucent, and just starting to brown.

Place each burger on a bun, and top with the sauteed onions and the remaining 1/2 cup of bacon.

Makes 4 burgers
