Tilapia Fillets With Tomato Mango Salsa

Ingredients

1 tsp ground cloves
1 tsp ground cumin
1/2 tsp cayenne pepper
1/2 tsp allspice
1/2 tsp onion powder
2 cloves of garlic, finely chopped
1 tsp red pepper flakes
1 Tbsp lime juice
1 Tbsp olive oil
1 lb tilapia fillet

For The Salsa
1 mango, peeled and diced
1 medium tomato, diced
1/2 small red onion, diced
1 Tbsp fresh basil, mint, or a combination of both, shredded
1 Tbsp lime juice
1 habanero or scotch bonnet pepper (optional)

Directions

In a small mixing bowl, combine the ground cloves, cumin, cayenne pepper, allspice, onion powder, chopped garlic, red pepper flakes, lime juice and olive oil. Mix the ingredients into a paste.

Rub the spice paste on both sides of the tilapia fillets. Refrigerate, and let marinate for about 15-30 minutes.

For the salsa, combine the mango, tomato, onion, basil and/or mint, lime juice, and habanero. Cover and refrigerate.

Preheat a nonstick skillet over medium high heat. When the pan is hot, add the fish, and cook until done, about 2-3 minutes per side.

Serve the fish with a large spoonful of the salsa.
