In a medium
skillet, melt the butter. Add the onions and garlic, and saute until
tender. Add the tomatoes, cumin, chili powder, and chipotle pepper.
Simmer on medium heat for 10-15 minutes.
In another skillet,
break up the chorizo, and fry until cooked, about 2-3 minutes. Remove
the chorizo from the pan and set aside.
Break the eggs
into a skillet, and cook over medium heat, stirring until the eggs
are fully cooked, about 3-5 minutes, add the cooked chorizo, and
stir to combine. Remove the pan from the heat.
Place the tortillas
on plate. Place some of the eggs on each tortilla, and pour the
tomato sauce over the eggs. Sprinkle the cheese over the top, and
serve.
