Strawberry Tortillas
Ingredients
1 lb. fresh or
frozen strawberries, thawed if frozen
8 oz. cream cheese
1-2 Tbsp. sugar
1/2 cup flour
8 medium flour tortillas
oil for frying
Directions
Heat the oil in a heavy frying pan or a deep fryer to about 350 degrees
In a blender or food processor, puree the strawberries until smooth.
Pour the strawberry puree into a small mixing bowl, and stir in 1 to 2 tablespoons of sugar, depending on your taste.
In a medium mixing bowl, combine the cream cheese, and half of the strawberry puree. Mix until smooth. Add the flour and continue mixing until all ingredients are well combined.
Spread the cream cheese and strawberry mixture evenly on each of the tortillas.
Roll up each tortilla, and fry in hot oil until golden brown, about 10-20 seconds.
Top the tortillas with the remaining strawberry puree, some whipped cream and serve.
