Brownie Pudding Cake

Ingredients

1 3/4 cups boiling water
1 cup flour
3/4 cup unsweetened cocoa powder
1/2 cup granulated sugar
2 tsp baking powder
1/4 tsp salt
1/2 cup milk
4 Tbsp butter or margarine, melted
1 tsp vanilla extract
1/2 cup packed brown sugar.

Directions

Preheat your oven to 350 degrees F.

In a medium bowl, combine the flour, 1/2 cup of the cocoa powder, granulated sugar, baking powder, and salt.

In a 2 cup measuring cup, mix together the milk, melted butter, and vanilla. Stir the milk mixture into the flour mixture, stirring until well blended. Pour into an ungreased 8 inch square baking pan.

In a small bowl, combine the brown sugar, and the remaining 1/4 cup of brown sugar. Sprinkle the mixture evenly over the batter in the pan. Carefully pour the boiling water evenly over the mixture in the baking pan. Do not stir.

Bake for 30 minutes, then remove from the oven, and cool on a wire rack for 10 minutes.

Serve it hot with whipped cream or vanilla ice cream

Here's a dessert for you chocolate lovers. It's really two desserts in one. While cooking the mixture separates into a brownie layer, on top of a chocolate pudding layer.
