Preheat
oven to 375 degrees F.
Squeeze as much
juice out of the shredded apple as possible. Toss the apple with
the lemon juice and set aside.
In a mixing
bowl, combine the brown sugar, butter, egg, and vanilla. Beat on
medium speed until fluffy.
Add the oats,
flour, coconut, baking soda and allspice. Beat on medium speed until
well combined. Add the carrot and flour, and mix to combine.
Place the dough
by heaping teaspoonfuls 2 inches apart onto an ungreased cookie
sheet. Bake at 375 F. for 10-12 minutes until golden brown.
Makes about
6 dozen cookies.
