Pineapple Upside Down Cake
Ingredients
1/4 cup plus 2
Tbsp. Butter
1/3 Cup packed brown sugar
1 8oz. can pineapple slices, drained.
1 1.3 cups all purpose flour
2/3 cup white sugar
2 tsp backing powder
2/3 cup milk
1/4 cup butter
1 egg
1 tsp vanilla.
Directions
Preheat oven to 350 degrees F.
melt the 2 Tbsp butter in a 9 inch cake pan, stir in the brown sugar and 1 Tbsp of water.
Cut each pineapple slice in half, and arrange in the bottowm of the cake pan.
In a mixing bowl, combine the flour, white sugar, and the baking powder.
Add the milk, the remaining 1/4 cup of butter, the egg, and vanilla. Beat with an electric mixer on low speed until combined, then turn the speed up to medium, and beat for one minute.
Spoon the batter into the pan, being careful not to disturb the pineapple.
Bake at 350 degrees, for 30 to 35 minutes, until a toothpick inserted near the center of the cake comes out clean.
Cool the cake on a wire rack for 5 minutes. Loosen the sides, and invert onto a plate
