Strawberry Bread

Ingredients

20 oz frozen strawberries, thawed, and undrained
1 1/4 c corn oil
4 eggs
1 tsp vanilla
3 c flour
1 tsp salt
1 tsp baking soda
1 c sugar
1 c brown sugar
2 Tbsp cinnamon
1/2 tsp nutmeg
1 tsp cloves

Directions

Grease and flour 2 bread pans OR 1 bundt pan.

Set aside and preheat oven to 350°.

In a medium sized bowl, mix the berries with the oil, eggs, and vanilla, and set aside.

Mix the remaining ingredients together then stir in the strawberry mixture, until just combined. (This is like a muffin batter, so overmixing will create "tunnels" in the baked bread.)

Pour into the prepared pans and bake until tester comes out clean,
about 1 hour.

Great served alone or spread with cream cheese.

Notes: It's good using blueberries or peaches too...
