Roasted Garlic & Parmesan Fritters
Ingredients
Oil for frying
2 heads roasted
garlic
1 egg
1 Tbsp oil
1/2 cup milk
3/4 to 1 cup flour
1/2 cup grated parmesan cheese
1/2 tsp salt
1/2 tsp baking powder
Directions
Heat the cooking oil to 350 degrees F.
In a mixing bowl, combine the garlic, egg, oil and milk. Mix together thouroughly.
Add the flour (start with 3/4 of a cup add more if needed), parmesan cheese, salt, and baking powder. Stir until a thick batter forms.
Carefully drop walnut sized portions of the batter into the hot oil. Do not overcrowd the pan. After about 2 minutes, turn the fritters over, and cook the other side. After another two minutes, remove the fritters with tongs or a slotted spoon, and drain on a paper towels.
Sprinkle with salt as soon as they come out of the oil.
Serve and enjoy!
