Stuffed Jalapenos

Ingredients

1/2 cup soft cream cheese
6 sun dried tomatoes, chopped
6 jalapeno peppers
12 strips of bacon

Directions

Preheat your broiler, and lightly grease a sheet pan or broiler pan.

In a small mixing bowl, combine the cream cheese and the sun dried tomato.

Cut the stem off of each of the jalapenos, and cut each pepper in half, lengthwise. Scrape out the seeds and membrane.

Fill each jalapeno half with some of the cream cheese mixture. Wrap each half with a slice of bacon, and place on the greased sheet pan.

Place the pan in the oven, and broil for 5-10 minutes, until the bacon starts to crisp. Remove from the oven, and serve immediately.

Serves 3-4

Note: If you like your stuffed jalapenos spicy, then you can leave the seeds and membranes in, but be warned, it will have quite a kick.
