Roasted Garlic & Goat Cheese Bruschetta
Ingredients
1 head roasted
garlic
4 ounces
goat cheese
1 baguette
2 tomatoes,
peeled, seeded, and chopped
8 basil
leaves, torn into small pieces
Directions
Preheat the oven to 350 degrees
Place the roasted garlic into a small mixing bowl.
In the same bowl, add the goat cheese, and mash into a smooth spreadable paste.
Slice the baguette into 16 slices.
Toast the baguette slices in the oven until slightly browned, about 2 minutes per side.
In a small bowl, mix the chopped tomato and torn basil leaves.
Spread some of the goat cheese and garlic mixture on each slice of bread, and top with some of the tomato and basil.
